Orange-Roasted Beet and Goat Cheese Phyllo Cups with Thyme

Ingredients

  • 12 shell without filling phyllo cups

  • small beets, whole, roasted

  • 1 tsp orange zest

  • 1 tsp. olive oil

  • salt and pepper

  • 1 oz. goat cheese

  • 1 tsp. fresh thyme leaf

Directions

  1. Preheat oven to 350 degrees F.

  2. Warm phyllo cups in oven for 10 minutes or just until crunchy. Allow to cool slightly (so they aren't hot).

  3. Dice beets into very small bite sized pieces. Toss in a bowl with olive oil, salt and pepper and orange zest. Fill phyllo cups with beets, top with a sprinkle of goat cheese and a sprig of thyme.
