Endive with Caramelized Pears and Blue Cheese

Ingredients

  • 3 medium Bosc pear peeled, chopped

  • 1 tablespoon(s) sugar

  • 3 ounce(s) Blue cheese crumbled

  • 2 tablespoon(s) walnut pieces toasted, chopped

  • 1/8 teaspoon(s) salt

  • 24 Belgian endive leaf about 3 heads/recipe

  • 1 teaspoon(s) flat leaf parsley chopped

Directions

  1. Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add pear and sugar to pan; sauté 2 minutes or until tender. Cool.

  2. Place pear mixture, blue cheese, walnuts, and salt in a bowl; stir gently to combine. Spoon about 1 1/2 tablespoons pear mixture into each endive leaf.

  3. Arrange leaves on a platter; sprinkle evenly with parsley.
