Green Beans and Red Onion with Warm Mustard Vinaigrette

A warm Green Bean dish, accented with sweet and tender Red Onions and a Red Wine Vinegar and Dijon Mustard Vinaigrette.

Directions

  1. Cook green beans in boiling water for 4 minutes or until just slightly tender. Drain. Toss with 1 teaspoon olive oil.

  2. Sauté red onion in a medium sauté pan with 1 teaspoon olive oil until just tender, about 2-4 minutes. Cool and add to beans.

  3. Heat a small saucepan over medium heat. Add vinegar, mustard, remaining olive oil, salt and black pepper. Cook over medium heat 30 seconds or until thoroughly heated, stirring constantly with a whisk. Toss warm vinaigrette with beans and red onions, and mix well to coat. Serve immediately.

  • 1 ½ lb. green beans, trimmed

  • 1 c. red onion, vertically sliced

  • 3 Tbsp. red wine vinegar

  • 2 Tbsp. Dijon mustard

  • 3 tsp. olive oil, divided

  • ¼ tsp. salt

  • ¼ tsp. pepper
