Orange Sweet Potatoes/Yams

Tasty Sweet Potatoes (or Yams), slow roasted, then mashed with fresh Orange Juice, Orange Zest and a touch of Butter.

Servings: 4

Directions

  1. Preheat oven to 350 degrees F. Bake sweet potatoes on a baking sheet (to catch any drips) for 1 hour or until soft.

  2. Remove from oven and allow to cool slightly.

  3. Halve, scoop out pulp, and add in orange juice, zest and butter. Mash well with a fork, potato masher or electric mixer.

  4. Garnish with chopped parsley and additional orange zest as desired.

Ingredients

  • 4 medium sweet potatoes (choose Yellow or Orange Flesh)

  • 1 large orange, zested and juiced

  • 1 Tbsp. butter

  • Salt and pepper

  • Chopped Parsley and additional Orange Zest (optional)
