Egg Cups

Ingredients

  • 5 eggs

  • salt, to taste

  • pepper, to taste

Optional Toppings/Fillings

  • spinach

  • tomato, diced

  • broccoli, cut into small florets

  • shredded cheddar cheese

  • bell pepper, diced

  • onion, diced

  • mushroom, sliced

  • ½ bunch asparagus, diced

  • bacon, cooked and chopped

Directions

  1. Preheat oven to 350˚F (180˚C).

  2. Fill a greased muffin tin with your favorite combination of fillings.

  3. Whisk eggs in measuring cup and fill up each tin.

  4. Sprinkle with salt and pepper.

  5. Bake for about 30 minutes or until a toothpick comes out clean.
