Apple-Oat Bran Muffins
A very heart-healthy yet tasty muffin, made with Granny Smith Apples, Oat Bran, Apple Juice and Cinnamon. A tasty breakfast or snack treat!

Directions
Preheat oven to 350°F. Prepare silicone muffin pan by placing on a baking sheet or perforated pan, or place foil/paper muffin wrappers in a standard muffin tin.
Core apples (peeling is not necessary). Shred them on a coarse grater setting. Mix shredded apple with apple juice concentrate and water. Set aside
In a mixing bowl, stir together whole wheat flour, white flour, oat bran, baking soda, salt, cinnamon, nutmeg and ginger.
Add apple mixture to the dry ingredients. Mix just enough to moisten all ingredients, then add dried fruits or nuts (if using). Do not overmix.
Divide batter among the muffin cups and bake till lightly browned, 20-25 minutes
Remove muffins from pan when cooled. Cool completely on a wire rack. Wrap in foil, then freeze.

2 large Granny Smith apples
1 ½ c. frozen apple juice concentrate, thawed
1 c. water
2 c. whole wheat pastry flour
1 c. unbleached flour
1 c. oat bran
2 ½ tsp. baking soda
¾ tsp. salt
1 tsp. ground cinnamon
½ tsp. ground nutmeg
½ c. dried cranberries, raisins, or nuts, diced (optional)
