Pepper, Cheddar, and Scallion Wheat Drop-Biscuits

Whole wheat Biscuits, flavored with Black Pepper, Cheddar cheese and Green Onions

Directions

  1. Preheat oven to 350 degrees. Prepare a baking sheet with parchment, foil or cooking spray.

  2. In a bowl, stir together the flour, baking powder, baking soda, black pepper, and kosher salt until well mixed.

  3. Using a pastry blender, cut in the butter until the mixture resembles coarse crumbs. (This can alternatively be done in a food processor, using pulses.)

  4. Add the cheese and green onions and stir lightly to combine. Stir in almost all of the buttermilk until the mixture becomes a soft, slightly sticky ball.

  5. Divide the dough into 8 equal portions. Space evenly on the baking sheet, about 1 inch apart. OR form one large circle with dough, and cut with a knife into 8 equal wedges.

  6. 6. Brush tops of biscuits with the remaining buttermilk.

  7. Bake the biscuits until the tops are light brown, 18-22 minutes. Remove from the oven and cool completely.

  8. If freezing, wrap well in foil, and place in a ziplock freezer bag. Label.

Ingredients

  • 1 c. whole wheat flour

  • 1 c. flour • 2 tsp. baking powder

  • ¼ tsp. baking soda

  • 1 tsp. black pepper, fresh ground (or to taste)

  • ½ tsp. kosher salt

  • 5 Tbsp. butter, unsalted, cut into ¼” cubes

  • ½ c. sharp Cheddar cheese, shredded

  • ¼ c. scallion, chopped

  • 1 c. lowfat buttermilk
