Slow-Cooked Chuck Roast or Pork Shoulder

This dish can be made using the seasoning combinations below.  If you purchase a large amount of roast, then the seasoning may need to be doubled or tripled. 

Ingredients

  • 1-3 lb. of chuck roast, pork shoulder or pork butt (either kept whole or cut into smaller, manageable pieces)

  • Oil, as needed

  • Beef or Chicken broth, as appropriate for dish

  • Onions, garlic or any root vegetables desired. (optional) 

Taco-Style Seasoning

  • 1 tsp cumin

  • 1 tsp smoked paprika

  • 1 tsp. oregano

  • ½ tsp. onion powder

  • ½ tsp. garlic powder

Italian-Style Seasoning

  • 1 ½ tsp. Italian Herbs (or an equal mixture of basil, oregano, thyme, rosemary)

  • ½ tsp. onion powder

  • ½ tsp. garlic powder

Asian-Style Seasoning

  • 1 tsp fresh garlic

  • 1 tsp. fresh ginger root, grated

  • 1 tbsp. soy sauce

  • 1 tbsp. hoisin sauce (or plum sauce)

  • 1 tsp. sesame oil

  • Sesame seeds, to taste

  • Green onion, sliced, to taste

Directions

  1. In a large skillet, heat the oil until shimmering.  Add roast piece(s), and brown on all sides. 

  2. Put into a slow cooker and add seasoning choice below.  Add optional vegetables, and at least 1 cup of broth to the slow cooker for moisture (roast will exude additional moisture while cooking), and cook on LOW for 8 hours or HIGH for 5 hours. 

  3. Alternatively, roast can be prepared in the oven.  After browning, add seasoning, optional vegetables, and at least 2 cups of broth.  Place in a preheated 325F oven, covered, and cook for 2-3 hours or until very tender. 

  4. Pull apart and cool before packaging.  Or use immediately!
