Roasted Delicata Squash

Feel free to substitute any squash you wish!  Butternut, Acorn. Hubbard or Golden Nugget are all good options.

Ingredients

  • 1 1/2 lb. delicate squash (large)

  • red onion, sliced

  • garlic cloves, minced

  • 2 tbsp. ghee, melted (or olive oil)

  • 1 tsp. rosemary, minced

  • 1 tbsp. Dijon mustard

  • salt and pepper

Directions

  1. Preheat oven to 425 F.

  2. Wash squash and cut lengthwise. Scoop out the seeds, then cut each half into 1/2" wedges.

  3. In a large bowl, combine remaining ingredients, then add squash, tossing to coat. Spread on a baking sheet and cook for 30 minutes, turning at least once to ensure even browning.
