Roasted Delicata Squash
Feel free to substitute any squash you wish! Butternut, Acorn. Hubbard or Golden Nugget are all good options.

Ingredients
1 1/2 lb. delicate squash (large)
1 red onion, sliced
3 garlic cloves, minced
2 tbsp. ghee, melted (or olive oil)
1 tsp. rosemary, minced
1 tbsp. Dijon mustard
salt and pepper
Directions
Preheat oven to 425 F.
Wash squash and cut lengthwise. Scoop out the seeds, then cut each half into 1/2" wedges.
In a large bowl, combine remaining ingredients, then add squash, tossing to coat. Spread on a baking sheet and cook for 30 minutes, turning at least once to ensure even browning.
