Cranberry Hazelnut salad with Creamy Balsamic Dressing
Switch up the dressing however you like… or purchase one from the store. Used dried Cherries or golden raisins instead, or any nut you prefer.
Serves 4
Ingredients
Dressing
1/4 c Greek yogurt plain
1 tbsp balsamic , or more, as needed
1 tbsp honey
1/2 tsp salt
1/8 tsp black pepper
1 garlic clove peeled
1 tbsp. olive oil
Salad
1/2 c hazelnut, toasted and chopped
1/4 large red onion, thinly julienned
5 oz. spring mix, washed, diced
1/3 c. dried cranberries
2 celery stalk, sliced thin
Directions
Prepare salad ingredients in a salad bowl. Refrigerate.
Combine dressing ingredients in a food processor and process until smooth and desired consistency. Refrigerate.
Toss everything together before serving. Enjoy!
