Making the Most of this Pandemic Thanksgiving!

Are you feeling completely overwhelmed this year as the holiday approaches?  Does the added stress of the pandemic shopping rush overshadow the holiday, or derail your usual thought process?  I know I have felt that way (and will likely continue to at times, if I am being honest!)  However, if I have realized anything during this crazy year, it’s to Keep. Things. Simple.

It’s ok that things may not look the same as they usually do.  Getting together with fewer numbers of family members can be disappointing, but it can also open the door for new traditions to be established.  Keeping the Thanksgiving meal smaller means your family can try new dishes.  Get the kids involved and make something together.  A smaller turkey, (or dare we say, chicken??!!), reduces some of the stress of preparing such a large traditional meal. 

As I was thinking through our upcoming menu, I wanted to keep things simple and straightforward.   While I LOVE to try new recipes and experiment, I realized that our family just wanted to celebrate together.  Keeping it simple means less stress for me, and also forces me to think outside the box.  What is still growing in our garden?  We will be integrating that into our feast.  Think small portions, and flavorful dishes but keep it simple. 

In that vein, I would like to share some simple and delicious recipes for your last minute Thanksgiving holiday planning.  But feel free to mix up flavors or ingredients based upon what you have.  It’s your holiday.. make it what you want!
