Easy Meals for Hot Nights

Portland, the city of typically mild temperatures, has experienced quite the hot and dry summer. I don’t know about you, but when the thermometer reaches 85 F and above, I am more reluctant to turn on my stove, let alone my oven! But never fear… you do not have to go out to dinner, but can eat a healthful meal at home, and for much less than going out. And the best part is that they take hardly any time to assemble. Many of the ingredients are things you might already have in your pantry anyway!

Below are two of my favorite salads, each with a little twist. Alternatively the “fillings” could also be used in between slices of fresh bread for a delicious sandwich or wrapped in a tortilla for a fantastic wrap. The choice is yours!
