Chocolate Mug Cake (with Variations)
This is our common go-to dessert when we want just a little something sweet and only have a few minutes. This makes a very large personal size cake, or can easily be split into 2-3 small portions. Serve with ice cream of choice or whipped cream/coconut cream.
Directions
In a large coffee cup, mix together the dry ingredients with a fork. Mix very well.
Add wet ingredients and mix well with a fork, incorporating the corners.
Microwave for 90 seconds, then remove.
Immediately divide into portions or enjoy! (The texture of this cake is best warm, and will be slightly gooey in spots. However, since there is no added egg, the mixture is safe to eat.)
Feel free to add fresh fruit, nut butter, or chocolate chunks to the mix for flavor variations.

4 tbsp. flour of choice (all purpose, 1:1 Gluten Free flour substitute both work well)
3 tbsp sugar (or sweetener of choice)
2 tbsp. cocoa
½ tsp. baking powder
Pinch salt
3 tbsp. milk of choice
1 tbsp. oil of choice (light tasting preferred; canola, vegetable, coconut – melted)
1 tsp. vanilla
