Cheese and Artichoke Heart Rounds

Artichoke Hearts, Onion and Cheese infuse this crustless quiche-like side dish with lots of flavor.

Directions

  1. Preheat oven to 350 F. In a medium pan over medium heat, sauté onion and garlic in olive oil until softened. Cool slightly. In a large bowl, whisk eggs. Add chopped artichokes, onion mixutre, grated cheese, breadcrumbs, salt and pepper, and fresh herbs.

  2. Pour into a 9×13 oiled baking dish (or divide into nonstick muffin tins coated with butter or nonstick spray). Bake for 20-25 minutes or until puffed, lightly browned and set.

  3. Cool completely, cut into squares (as needed) and enjoy!

Ingredients

  • 2 tsp. olive oil

  • 1 small white onion, finely chopped

  • 2 medium garlic cloves, finely chopped

  • 1 15 oz. can artichoke heart in water, finely chopped

  • 1 c. cheese, any variety; cheddar, fontina, jack, pepper jack, provolone

  • 6 large eggs

  • ½ c. bread crumbs

  • salt and pepper

  • 1 tsp. chopped flat leaf parsley

  • ½ tsp. fresh thyme, chopped
