Chicken Sausage, Bow Tie Pasta and Mozzarella Cheese in a Simple Tomato Sauce

Serves: 4

Directions

  1. Preheat oven to 400 F.

  2. Cook pasta in salted boiling water until desired doneness. Drain. Set aside.

  3. In large saucepan, heat oil over medium. Add chicken sausage and break up with a spatula. Cook until cooked through, then add garlic. Cook until just fragrant, about 1 minute. Add tomatoes, oregano, and sugar. Bring to boil, reduce to a simmer, cook stirring and breaking up tomatoes until slightly thickened, 5-8 minutes. Season with salt if desired.

  4. Add pasta and half the mozzarella; toss to combine. Transfer to a large baking dish. Top with remaining mozzarella and parmesan cheese.

  5. Bake at 400 F, uncovered for 15-20 minutes, or until bubbly and cheese is golden brown. Remove from oven and allow to rest 5-10 minutes. Serve and enjoy!

  • 1 teaspoon(s) olive oil

  • 8 ounce(s) chicken sausage

  • 1 garlic clove minced

  • 1 28 oz. tomatoes, canned whole peeled, in puree

  • 1/4 teaspoon(s) oregano, dried

  • 1/8 teaspoon(s) sugar

  • salt

  • 4 ounce(s) Mozzarella cheese, part skim shredded

  • 1/4 cup(s) Parmesan cheese grated
