Roasted Delicata Squash with Lemon-Sage Butter

Ingredients

  • 3 pounds delicata squash

    Lemon Sage Butter

  • lemon, zested

  • 4 tbsp. butter, softened

  • 4 sage leaves, minced

  • salt and pepper

  • clove garlic, grated

    1/4 cup pepitas, toasted

Directions

  1. Preheat oven to 425 F.

  2. Wash squash and cut lengthwise. Scoop out the seeds, then cut each half into wide strips/wedges. Drizzle with olive oil and season with salt/pepper. Roast for 30-40 minutes or until tender.

  3. In a bowl, combine remaining ingredients, then drizzle over hot squash. Sprinkle with Parsley, and toasted pepitas.
