Red Pepper and Green Bean Almondine

Ingredients

  • 1 pound green beans

  • 2 medium red bell peppers, julienned

  • 2 tablespoons unsalted butter

  • ¼ cup sliced almonds, toasted

  • 2 medium shallots, finely diced

  • 1 cloves garlic, minced

  • 1 lemon, zested

  • 2 tsp lemon juice

  • Salt and pepper, to taste

Directions

  1. Preheat oven to 350 and toast almonds on sheet pan until golden brown, 8-12 minutes, turning halfway. 

  2. Bring pot of water to boil and blanch green beans for 3-4 minutes, or just until they all turn bright green. Set aside.

  3. Melt butter in large frying pan over medium-high heat until bubbling.  Add bell peppers and sauté for 2 minutes. 

  4. Reduce heat to medium and add shallots and garlic, cooking for another minute. 

  5. Add green beans to pan, sautéing until tender. Stir in lemon zest and juice. Remove from heat and add almonds. 

  6. Season with salt and pepper.  Stir until combined.
