Fruit Shrubs - Pineapple and Berries

Ingredients

For Pineapple Shrub

  • 1 large pineapple, cubed (approximately 4 cups) (or frozen pineapple chunks)

  • 2 cups dark brown sugar

  • 2 cinnamon sticks

  • 4 cloves

  • 4 quarter-inch pieces peeled ginger root

  • 2 cups water

  • 2 cups apple cider vinegar

For Berry Shrub

  • 1 pint fresh or frozen raspberries and/or blackberries

  • 1 cup sugar

  • 1 sprig thyme

  • 1 cup white balsamic vinegar

Directions

For Pineapple Shrub

  1. Add pineapple, sugar and spices into a medium saucepan and cook over medium heat until the sugar bubbles and the pineapple is caramelized.Add water and bring to a boil, then reduce heat, cover and simmer for 20 minutes.

  2. Remove from heat and add the vinegar, stirring to combine.

  3. Cool and refrigerate overnight.

  4. Strain out solids (note: the pineapple chunks are edible and delicious; don’t discard them) and store in refrigerator.

For Berry Shrub

  1. Add the berries, thyme and sugar to a large bowl and refrigerate overnight.

  2. Stir in the vinegar and let sit for 3 hours, mixing or shaking occasionally, then stir until sugar is dissolved.

  3. Strain out solids and store in the refrigerator.
