Parmesan Smashed Red Potato

Directions

  1. Cut up the potatoes (as needed) and place in a large saucepan. Cover with cold water. Bring pan to a boil and cook gently for 15-20 minutes or until tender. Drain and return potatoes to the stovetop.

  2. Add the butter. Add some of the milk and the sour cream. With an electric mixer or a potato masher, begin to mash the potatoes. Add the cheese and the rest of the milk (as necessary). Mash until just combined but still chunky.

Ingredients

  • 1 ½ lb. red potato small, wash skins well, peel discolored portions but leave a little red peel

  • 1 tbsp. butter

  • 2 tbsp. sour cream

  • ¼ c. milk

  • ¼ c. Parmesan cheese, hard grated fine

  • salt and pepper
