Basic Vinaigrette

Directions

  1. Whisk the mustard and vinegar together in a small bowl until incorporated. Slowly, whisk in the olive oil until emulsified. Or, alternatively, shake ingredients together in a jar (or place ingredients in a used-up bottle of Dijon mustard, and shake well to use up the remaining mustard in the bottle) until well-combined. Season with salt and pepper and serve over your choice of greens.

  • 1 tsp. Dijon mustard

  • 2 tbsp. vinegar (your choice… apple cider, red wine, sherry, white wine, balsamic..)

  • 4-6 Tbsp. olive oil

  • Salt and pepper to taste
