Barbecued Honey-Brined Chicken, with Grilled Onions and Peppers

This recipe can also be made with a boneless pork tenderloin, which is easy to grill and perfect for two.

Directions

  1. Bring water, salt, and honey to a simmer in a medium-size saucepan over medium-low heat, stirring until salt dissolves. Let cool completely.

  2. Place chicken or pork in a bowl, pour cooled brine over top. Refrigerate, covered for 2 to 3 hours. Remove meat from brine, rinse under cold water, and pat dry with a paper towel. Season with pepper before grilling.

  3. Slice 1 sweet onion and 1 large red pepper, coat with olive oil, season with salt and pepper, and grill at the same time with the meat.

  • 6c. Water

  • 1/2 c. Coarse salt

  • 1/2 c. Honey

  • 1 whole chicken, cut up, or 6 1-inch thick bone-in pork chops

  • Pepper

Other Ingredients

  • 1 sweet onion

  • 1 red pepper

  • Olive oil, to coat
